India has always been known as the spice capital of the world. Chillies play an integral role in the making of every desi recipe. Be it used as a paste, or simply for garnishing purposes, recipes are incomplete without them. We can trace back the origins of the chilli to the 16th century when the Portuguese brought it to Asia.

However, one can find themselves a buffet of chillies here in India. Till now, ten different types of chillies exist with qualities unique to their own. Some chillies are rather generic but some are extremely region-specific. For example, the chillies grown in Kashmir popularly known as Kashmiri chillies can be found in each and every household of Indians but Bhut Jolokia or ghost pepper which is widely known as the hottest chilli in the world is limited to Assamese cuisine.
